Our Chefs

Tom Peddecord
Owner Chef

Tom Peddecord graduated with "High Honors” from Le Cordon Bleu Western Culinary Institute in Portland in March of 1998.  While attending Western Culinary Tom was the recipient of the Ray and Gloria Marshall Scholarship, a national competition.  Chef Tom served an internship under Chef Andrew Fairlie at the world-renowned and Michelin starred restaurant, One Devonshire Gardens in Glasgow, Scotland.  Chef Tom gained additional culinary experience at the Imperial Hotel and Paragon restaurant in Portland and the Columbia Gorge Hotel in Hood River.  Chef Tom is an active member of the American Culinary Federation and is an ACF certified chef.  Chef Tom and wife Linda, owned their own catering company in West Linn. Chef Tom and Linda were the "in-house” caterers for the city of Wilsonville city council and library board. 

Karen Edwards
Pastry Chef

Karen Edwards graduated with honors from the CIA (Culinary Institute of America) Greystone, located in Napa Valley, CA.  Previous to her Culinary degree, Karen graduated with a Bachelor's of Fine Arts from the New School of Art, located in NY, NY.  Karen's artistic culinary skills and talents have afforded her the opportunity to work for a number of fine dining establishments; Hotel Lusso, Cafe 5-10, and The Davenport Hotel, while residing in Spokane ,WA.  In 2000 Karen started Jackson Valentine, her own dessert business, where she not only supplied fine dining venues with great desserts and pastries, she also catered special events and developed a thriving wedding cake following.  While working in Spokane, Karen also made bi-weekly appearances on KXLY (channel 4), where she demonstrated the  "Dessert of the Week" - on the Spokane Morning Show. Karen taught the viewers different baking concepts and techniques, and shared (as well as demonstrated)  recipes  viewers could easily create at home.
Karen and Clint now call Toledo home.  Clint is a deep-sea fisherman (his ships and international crew travel the globe for months at a time).  Karen continues to cater weddings and special events through her Jackson Valentine business as well as honor PANACHE with her creative talents.
